We are the breweries. We promise that every bottle of sake is directly from our brewery to your table, without any third-party importers interfering, marking up prices, or playing games with the product. You’ll receive exactly what you see.
As the brewery that makes our premium sake, we’re intimately involved in every step, from the rice harvest to brewing, bottling, and final shipping. Our kurabito (蔵人) handle each bottle with care, and our employees are dedicated to maintaining the highest quality control.

Since 1838, the tradition of crafting sake has been handed down for generations in our breweries, and each batch is still crafted with the same attention to detail.
Though some of the methods used to craft the sake remain the same, we have implemented new technologies that allow the sake to reach an even higher level of sophistication and quality.

Glacier water, Organic rice
At our small-batch breweries in select regions of Japan, we craft high-end sake with a focus on rice, water, koji, and time. Our rice is grown in clean, mountain-fed paddy fields using organic, sustainable practices—no pollution, no heavy metals, and no industrial chemicals—to protect both flavor and the land.
Our brewing water comes from snow-fed mountain springs in Japan’s central highlands. Naturally ultra-soft and low in minerals, it supports long, cool fermentations that elevate delicate aroma, silky texture, and a refined, lightly mineral finish. In fact, our water resource is rated as the best direct drinking water in Japan.
We partner with family farms through fair, long-term contracts. Each lot is carefully selected and inspected for quality, and our sourcing emphasizes organic methods and sustainability—supporting young growers and local jobs.
No mix-and-match

Team Junmai, Not mixed ‘assemblages’
We are committed to providing consistently pure junmai sake. We do Not use blended sake under the marketing concept borrowed from wine and champaign makers, or simply follow created trends. Instead, we insist on only brewing the top quality sake, with no added extra alcohol or color or flavors.
All of our sake is junmai level, meaning that it is brewed solely from rice, water, kobo, and koji. We strive to bring you the best in sake, and guarantee a consistently great taste every time.
